The beef is very tender and you can serve with mashed potatoes.
1 pound beef for stew
14oz tomatoes sauce or diced tomatoes
1 celery stalk
1 tablespoon olive oil
1 teaspoon oregano
1 bay leaf
salt and pepper to taste
Arrange olive oil,onion,carrots, celery in bottom of slow cooker. Season beef with salt, pepper, oregano and place roast on top of vegetables in slow cooker. Pour tomato sauce or diced tomatoes over beef, sprinkle with peppercorn and the bay leaf. Cover and cook on Low for 7 hours.
Serve the beef and the vegetables with mashed potatoes.
