This recipe has a very tasty crispy snack or appetizer.
Cook’s Tips: Using a sharp knife, remove potato peel in strips, leaving a thin shell of potato inside. Cut the peel lengthwise into 1 inch wide strips.
4 medium russet potatoes,scrubbed
1/8 teaspoon hot red pepper sauce
½ tablespoon oil
1 tablespoon butter
½ teaspoon salt
1/8 teaspoon freshly ground black pepper
Preheat the oven to 500F. Grease a baking sheet with butter.
Peel potato lengthwise. Cut potato peeling into 1 inch wide strips, leaving some flesh intact.
In a medium bowl, mix oil, salt,black pepper and hot pepper sauce.Add the potato skins to oil mixture, toss to coat.
On prepared baking sheet lay potato skins strips. Bake potato skins until crispy and golden browned,about 25 minutes.Serve hot.
