1 chicken breast
1 cup rice
1 carrot whole or 5 baby carrots
1 onion, whole
1 tablespoon butter
5 cups water
Over medium heat, using a sauce pan pour the water, add chicken, salt and boil until the chicken is tender. Remove the foam and add the carrots, onion and parsley. Cook until all the ingredients are tender. Remove from the heat. Take out the chicken,vegetables and set aside the broth.
Preheat oven to 350 degrees.
In a ovenproof pan add rice and 4 cups chicken broth. Cook over medium heat until the rice is almost done. Add butter, carrots sliced and chicken cut in small pieces and bake until the rice is cooked.
Garnish with parsley.
