Chilled Coconut Tapioca Soup



Asian “soup” , cold and creamy is really a dessert.

Serve 2


10 cups water

1 cup tapioca pearl

1 mango, peel, cubes

1 cup coconut milk

1 tablespoon honey

1 teaspoon black and white sesame seeds


Place the mango and the coconut milk in the freezer for 10 minutes.

Pour the water into a large pot and bring it to a boil. Pour the tapioca pearl into the water slowly. Stir softly. After the tapioca becomes plump, turn the heat to a medium setting and cover the pot for 5 minutes. Scoop the tapioca out and allow it to cool.

In a glass bowl place tapioca, mango, coconut milk. Sprinkle with honey,  black and white sesame seeds.
