Edamame Tomatoes Salad with Bulgur

Bulgur wheat is absolutely delicious, nutritious and easy to prepare a salad with edamame and tomatoes. Bulgur is excellent source of dietary , fiber and protein.

Edamame tomatoes salad with bulgur is very healthy recipe and may reduce the risk of heart disease and some cancers.

Serve 4


6 cherry tomatoes, cut into four

1 cup edamame, frozen

1 cup green onions, chopped

1 lemon

1 tablespoon dill, chopped

1 tablespoon parsley, chopped

1 cup bulgur wheat , uncooked

olive oil

salt and pepper to taste


In a large bowl place the bulgur and stir in 1 cup hot water. Cover and leave it for 1 hour. Bulgur will become tender. On a saucepan over medium heat pour edamame and water. Boil for few minutes, until the edamame are made. Drain. Combine tomatoes, green onions, dill, parsley, edamame, bulgur, juice from 1 lemon, olive oil, salt and pepper in a big bowl and mix. Serve cold.
