Meatloaf Pie

Very easy meatloaf pie recipe, one layer meat mixture, one layer mashed potatoes , mozzarella on top.

Garnish with dill.




Serves 4


1 lb organic ground beef

14 oz organic diced tomato

1 carrot, sliced

1 onion, chopped

1 teaspoon thyme

4-5 potatoes, diced

2 tablespoons milk

2 tablespoons butter


3 tablespoons olive oil

salt, pepper


Over medium heat in a saucepan add oil, onion and carrots and saute for 5 minutes. Add ground meat and fry until the meat changed the color. Add diced tomatoes, salt , pepper, thyme, cover with a lid and let boil for 1 hour and stir occasionally. Add water if necessary.

In meantime boil potatoes in plenty of salted water for 15 20 minutes. Drain water from potatoes. Put hot potatoes onto a bowl, add butter,salt. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, adding milk.

Preheat oven to 400 F degrees.

In a baking dish place the meat, then fill with mashed potatoes and sprinkle with mozzarella over the potatoes. Bake for 15 minutes, until cheese melts.

Garnish with dill and serve  with roasted pepper fillets.
