Chicken Roulade with Cactus Pear

Roulade is a french term for a thin cut of meat that is stuffed and rolled.

Chicken roulade recipe is made with chicken breast, vegetable, cheese and ham.

Very delicious.

Serves 6-8


1 pound ground organic chicken

½ cup cheese ( provolone or cheddar or european cheese)

2 small eggs

salt, pepper to taste

½ red bell pepper , finally chopped

1 scallion, finally chopped

1 cooked carrot, finally chopped

2 pickles, finally chopped

2 slices of ham, finally chopped

1lb empty can cut it on both ends (see the photos)

2 unbleached parchment baking sheets

cactus pears (optional)


Mix together ham, pickles, red bell pepper, scallion and the carrot in a bowl.

In a food processor place the ground chicken with the eggs and cheese, salt and pepper. Process 1 minute.

Combine the chicken mixture with the vegetables and the ham.

Preheat oven to 350 F degrees.

On cookie sheets place the parchment baking sheet and the can standing . Cut a rectangle of parchment baking sheet and brush it with oil. Place it inside the can. Fill the can with chicken mixture. Cover the can with aluminum foil and bake for 40 minutes.

When is done, cool and take out the chicken roulade from the can.

Slice it and serve with cactus pears.
