Most freshwater fish are low in fat and high in protein.
Trout and Tilapia provide a good nutrition choice for lunch and dinner.
4 tablespoon oil
6 small trout or tilapia fillets
1 cup bread crumbs or corn meal
vegetable oil, for deep frying
salt and pepper
¾ cup anchovy butter (optional)
Beat the egg and the oil in a shallow dish.
Wash the fish very well, season with salt and pepper.
Dip the fish in the egg mixture and roll them in the bread crumbs or corn meal.
Heat the oil in a deep-fryer , add the fish and cook for 10 minutes, or until lightly browned all over.
Remove, drain on paper towels and keep warm.
Optional: warm the anchovy butter in a small pan, sprinkle the trout and serve immediately.
Serve with roasted pepper fillets .
