Mushroom with Cheese


Really fast side dish for dinner with very low calories. Mushrooms contain about 80 90 percent water, excellent source of potassium.

Serve 4


20 oz organic mushroom, sliced

1 onion, chopped

1 red pepper, chopped

3 garlic cloves, minced

2 tablespoons olive oil

1 teaspoon oregano

4 slices cheddar cheese

salt, black pepper to taste


Heat the oil in a pan and saute the onion with the red pepper for 5 minutes., add the mushrooms for 8 minutes on high heat.

Remove the pan, add the garlic, oregano, salt and black pepper.

Cut 2 slices of cheese and mix them with the mushroom.

Place the mushroom mixture in a ovenproof dish and cover them with another 2 slices of cheese and sprinkle with oregano.

Preheat the broil to low and bake for 5 minutes.

Serve with roasted whole chicken.
