Cooking healthy organic chicken salad could be easy. Fresh spinach, roasted peppers, tasty tomatoes and organic chicken. Put that all together and it spells fast and easy lunch.
10 organic sweet mini bell peppers, roasted, chopped
5oz (142g) organic baby spinach, chopped
1 lbs Campari tomatoes, cut in half lengthwise
1 organic chicken breast, cooked, cut into cubes
1 tablespoon olive oil
salt, fresh black pepper to taste
juice for ½ lemon
1 teaspoon fresh oregano
Mix the roasted bell peppers, baby spinach, tomatoes, olive oil, lemon juice, salt and pepper in a big salad bowl. Add chicken on top, sprinkle with oregano and serve with cheesy garlic bread.
