Hearty Veggie Salad


Vegetarian and hearty salad recipe for side dishes or for a full lunch meal.

Serves 2


1 lb organic hearty veggie mix (cauliflower & broccoli )

1 garlic clove

1 small onion

½ red bell pepper

3 tablespoons fresh lemon juice

3 tablespoons extra virgin olive oil

1 teaspoon fresh parsley

1 teaspoon fresh dill

1/4  teaspoon oregano

salt and pepper to taste


Bring a large pot of water with salt to a boil.

Make dressing: Place the garlic, onion, red pepper, lemon juice, olive oil, parsley, dill, oregano, salt and pepper in a food processor and mix well.

Add hearty veggie mix to boiling water and cook until just tender, about 5 minutes. Drain and rinse under cold water.

In a large salad bowl, toss cooked vegetables with dressing.

Serve cool.
