Tomato Soup with Pasta

Serves 4


3 scallions, sliced

1 carrot , sliced

1 celery stick, sliced

2 cup homemade vegetable broth

4 cups tomato juice from fresh tomatoes (peeled) or 2 cans organic diced tomatoes.

1 cup pasta

1 tablespoon olive oil

½ cup fresh parsley, chopped

salt and pepper to taste

1 bay leaves (optional)


Heat oil in a soup pot, add the scallions, carrots and celery for 5 minutes. Add the broth sprinkle with salt and pepper and bring to a boil for 5 minutes. Process the peeled tomatoes or the diced tomatoes from the can in a food processor. Pour in the soup pot the tomato juice, simmer for 10 minutes then add pasta . When pasta is tender, garnish with fresh parsley and serve for the little ones.
