Watermelon Salad


Is it to hot to cook? This watermelon salad recipe is cool and refreshing. Just mix red onion, red beet, tomatoes, watermelon. Garnish with just a little green.

Serves 6


1 small watermelon, cut into bite size pieces

1 red anion, sliced

1 beet, steamed and sliced

1 tomato, sliced

½ cup extra virgin olive oil

¼ cup red wine vinegar

2 tablespoons fresh parsley, chopped

salt and pepper


In a bowl, combine the melon, onion, beet, tomato. Pour on top the oil, vinegar.

Sprinkle with salt and pepper. Toss gently until everything is coated and evenly mixed.

Garnish with fresh parsley.
