Whole organic branzino is stuffed with lemon and herbs and baked in a salt crust, very tasty and light.
4 small whole organic branzino
3 pounds coarse kosher salt
1 lemon , sliced
16 springs thyme
4 bay leaves
2 tablespoons water
8 garlic cloves, sliced
Preheat oven to 500 degrees F.
Lay out a baking sheet for the 4 fish, Cover sheet with salt, add water and mix.
Lay the fish on salt. Stuff each fish with 4 springs of thyme, 2 slices of lemon, 2 garlic cloves, 1 bay leaf.
Pack the salt over top of the fish until a sealed crust is formed.
Low the oven to 450 degrees F and bake the whole organic branzino until salt is golden about 15-20 minutes.
Crack open salt crust to serve.
