Golden Beets and Sweet Potatoes Salad


Beets and sweet potatoes salad recipe, easy to prepare, delicious combination loaded with nutrients and appealing colors.

Serves 4


3 golden beets, peeled

1 red beet, peeled

1 large sweet potato, peeled

1 teaspoon fresh mint

2 teaspoons balsamic vinegar

2 tablespoons virgin olive oil

1 tablespoon truffle oil (optional)

salt and pepper to taste


Steam the beets and the potato, cut them into bite sized cubes.

Transfer the vegetables to a large mixing bowl.

Add oil, vinegar, mint, salt and pepper and gently toss everything to combine well .

Let the veggies cool for a while and transfer to the fridge to cool completely and let flavors develop in the fridge.

Garnish with fresh mint, if desired.
