Fettuccine with Shiitake Mushrooms


Even though shiitake mushrooms are popular in Asian counties, they are now being used in many dishes around the world because of the nutritional benefits: prevents cancer, reduces cholesterol, strengthens immune system and much more. The combination in this recipe of fettuccine with shiitake mushrooms gives a rich flavor.

Serve 4

Organic Ingredients 

8oz fresh organic shiitake mushrooms, sliced

2 tablespoons olive oil

8oz fettuccine

2 cloves garlic , minced

zest and juice of a lemon

salt and pepper to taste

2 springs fresh organic thyme or oregano

3 tablespoons freshly grated Parmesan cheese

freshly ground black pepper


Heat the olive oil in a large skillet over medium high heat. Saute the garlic with mushrooms and 1 spring thyme or oregano , for 8 minutes. Set aside , squeeze in the lemon juice and add salt and pepper to taste.

Cook the pasta according to the package instructions and drain loosely. Place the pasta into a bowl with mushrooms mixture, along with the parmesan and toss.

Garnish with thyme or oregano springs.
